Salep Flavored Rice Pudding

Serves 4-6 – Preparation time: 25 min.

  • 1/2 liter of milk
  • 2 cups Sütdiyarı Salep (Milk Company Salep)
  • 2 teacups of rice
  • 1 liter of water
  • 3 tablespoons rice flour
  • 1-1.5 cups of powdered sugar (you can use 1 cup if you don’t prefer it too sweet)
  • Cinnamon

  1. To make rice pudding, first wash the rice and put it on the stove with water.
  2. Boil the rice until it expands and absorbs the water. Be careful not to burn the rice by keeping the stove at a high temperature.
  3. Then add cold milk. Stir 1-2 times and wait for it to boil.
  4. In the meantime, in a bowl, mix the rice flour with 1 cup of cold milk. Make sure there are no lumps.
  5. Take 1-2 ladles of boiling milk from the pot and add it to the bowl (the rice flour should be cooled).
  6. Add the rice flour and Sütdiyarı Salep to the pot, stir occasionally, and cook for about 10 minutes.
  7. Add the powdered sugar, stir, and let it boil for another 1-2 times.
  8. Divide the rice pudding into bowls.
  9. When it cools down, you can serve the rice pudding with cinnamon sprinkled on top.
